Cooking With Asparagus – 5 Delicious Asparagus Recipes You Must Try

I used to hate asparagus, but over the years it has grown on me significantly, probably because as a kid I had to eat everything on my plate even if I didn’t like it…lol. I have discovered a few asparagus recipes that I really enjoy. Wether you like asparagus or not, it’s just so darn good for you that you should just eat it anyway! That’s actually how I have come to like certain items over the years. I also think that these recipes could change your perception towards asparagus because they are so tasty. Here are my 5 favourite asparagus recipes!!

 

Garlic Parmesan Roasted Asparagus

Ingredients:

1/2 bunch fresh asparagus

3 cloves minced garlic

2 tbsp avocado oil

Pink Himalayan sea salt, to taste

Fresh ground black pepper, to taste

1/4 – 1/2 cup fresh grated parmesan cheese

Preheat oven to 425 F. Line baking sheet with aluminum foil and set aside. Wash asparagus and trim off tough ends. Spread asparagus evenly across baking sheet in a single layer. Drizzle avocado oil over asparagus, then sprinkle with salt and pepper, garlic and parmesan cheese. Bake in oven for 8 minutes, then serve. Makes 4 – 5 servings. I found this recipe over at Belle of the Kitchen, though I made a few adjustments to suit our preferences.

Pan Seared Asparagus

Ingredients:

1 bunch asparagus

1 tbsp avocado oil

2 cloves minced garlic

Pinch of crushed red pepper

Pink Himalayan sea salt, to taste

Fresh ground black pepper, to taste

Heat oil in frying pan over medium – low heat. Sautée garlic and crushed red pepper for 1 – 2 minutes, or until a very fragrant aroma is released. Reduce heat to low and add asparagus. Cover and cook for approximately 10 – 15 minutes or until desired doneness. Be sure to stir occasionally. Makes 4 – 5 servings.

Oven Roasted Asaparagus

Ingredients:

1 bunch asparagus

2 tbsp avocado oil

Pink Himalayan see salt, to taste

Fresh ground black pepper, to taste

Heat oven to 400˚F and cover your baking sheet with parchment paper (optional). Cut asparagus into 2 inch size pieces. Toss in oil and spread evenly over parchment papered baking sheet. Add salt and pepper to taste. Roast in oven for 10 – 15 minutes. Makes 4 – 5 servings.

Bacon Wrapped Asparagus

Ingredients:

1 bunch asparagus

20 slices of bacon

1/2 tsp garlic powder

Pink Himalayan sea salt, to taste

Fresh ground black pepper, to taste

Preheat oven to 400˚F. Pan fry bacon slices until slightly golden, bacon needs to remain soft, allow bacon to cool. Wash asparagus and trim off tough ends, then wrap each asparagus stalk with one slice of bacon. Cover baking sheet with parchment paper, spread asparagus evenly across baking sheet in a single layer. Sprinkle with garlic powder, salt and pepper. Bake in oven for 15 – 20 minutes. Makes 4 – 5 servings.

Asparagus, Leek & Potato Soup

Ingredients:

1 bunch asparagus, trimmed and cut into 1 inch pieces

1 leek stalk, chopped, both white and green

10 baby red/yellow potatoes, cut in half or quartered

1 large yellow onion, chopped

4 celery sticks chopped

4 cups chicken or vegetable broth

Pink Himalayan sea salt, to taste

Fresh ground black pepper, to taste

Blend chopped leek, onion and 1/2 cup broth in blender until puréed. Heat 1 tbsp broth in pot over medium – low heat, and add the celery and asparagus and cook for 3 minutes, stirring constantly. Add puréed mixture, remainder of broth, potato pieces and salt and pepper. Bring to a boil, reduce heat, partially cover and simmer for 25 – 30 minutes. Stirring occasionally.   1. Great recipes! I´ve recently been to an asparagus festival on a local farm and I also tried asparagus risotto for the first time! Delicious!
